Brewing Process
1. Mashing
In a large brew kettle, heat 3 gallons of water to approximately 165°F (74°C). Add the pale malt, crystal malt, chocolate malt, and roasted barley into a grain bag and submerge it in the hot water. Maintain the temperature for 60 minutes, stirring occasionally.
2. Sparging
After mashing, remove the grain bag, allowing it to drain into the kettle. Rinse the grains with an additional 2 gallons of hot water (around 170°F or 77°C) to extract more sugars. Collect the wort in the kettle.
3. Boiling
Bring the wort to a boil. Once boiling, add 1 oz of Magnum hops and boil for 60 minutes. After 45 minutes, add 1 oz of East Kent Goldings hops to the kettle for flavor.
4. Cooling
After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).
5. Fermentation
Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast into the wort and seal the vessel with an airlock. Allow fermentation to occur at room temperature for 1-2 weeks.
6. Bottling
Once fermentation is complete, dissolve 3 oz of corn sugar in 2 cups of boiling water and cool it. Add this to the beer before bottling to carbonate it. Bottle the beer and cap securely.
7. Conditioning
Store the bottles in a dark, cool place for at least 2 weeks to allow carbonation to develop. Chill before serving.
