Duck and Marinade
Method
Preparation and Cooking
Marinate the Duck
In a bowl, combine salt, black pepper, five-spice powder, soy sauce, honey, minced garlic, and grated ginger. Rub this mixture all over the half duck, ensuring it is evenly coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.
Preheat the Oven
Preheat your oven to 375°F (190°C).
Roast the Duck
Place the marinated half duck on a roasting rack in a roasting pan. Roast in the preheated oven for about 1 hour, or until the skin is crispy and the internal temperature reaches 165°F (74°C). Baste occasionally with the drippings.
Make the Gravy
Once the duck is done, remove it from the oven and let it rest for 10 minutes. Meanwhile, pour the drippings from the roasting pan into a saucepan. Add a bit of water or chicken broth if needed. Bring to a simmer and thicken with cornstarch if desired, adjusting seasoning to taste.
Serve
Carve the duck and serve it with the five-spiced gravy on the side.
