    Temper and prepare cheeses

    Remove all cheeses from refrigeration 30–45 minutes before serving to come to room temperature. Pat any excess moisture from soft cheeses with a paper towel.

    For the Manchego: cut into 0.5 cm-thick wedges or bite-size triangles arranged in a fan to show the rind. Leave some intact piece for visual height.

    For the Brie: place whole wheel near the center or edge of the board; optionally score the top in a crisscross so guests can spread easily. Provide a small spreader knife.

    For the chèvre: slice into 1 cm rounds or make a log smear — place rounds in a loose stack or spread a small line on the board for variety.

Chocolates
