Prepare water and salt
Bring 12 cups of water to a rolling boil in a large pot over high heat. Add 1 tablespoon kosher salt once the water boils.
Cook pastas (staggered or separate)
Because the three pasta shapes have different cook times, you can either cook them in separate pots or stagger them in the same pot. Option A (separate pots): Bring two additional smaller pots of salted water to boil and cook each pasta in its own pot. Option B (one pot, staggered): Add the pasta with the longest cook time first, then add the others according to their package times so they finish al dente together. As a guideline: start penne first, then linguine about 2–3 minutes later, and add spaghettini last. Cook each until al dente (firm to the bite): penne ~9–11 minutes, linguine ~8–10 minutes, spaghettini ~6–8 minutes. Stir occasionally to prevent sticking.
Reserve pasta water and drain
Before draining any cooked pasta, ladle out and reserve about 1 cup of the starchy cooking water for the sauce. Then drain each pasta in a colander and briefly rinse only if you plan to use in a cold salad; otherwise do not rinse so sauce adheres.
Keep warm
If cooking in separate pots and not serving immediately, toss each drained pasta with a teaspoon of olive oil to prevent sticking and keep covered.
Stir in 1 teaspoon crushed red pepper flakes and 1 teaspoon freshly ground black pepper. Cook for 30 seconds to bloom the flavors.
Add one portion of the drained pasta (choose penne, spaghettini, or linguine) into the sauté pan with the sauce. Toss gently to coat, adding up to 2–4 tablespoons of the reserved pasta water as needed to loosen and emulsify the oil into a glossy sauce that clings to the noodles. Taste and adjust seasoning with more salt if required. Repeat this step separately for each pasta shape so each is properly dressed (use a clean pan or wipe the pan between types if you prefer distinct flavors).
Turn off heat and stir in 2 tablespoons chopped fresh parsley, 1 teaspoon lemon zest, and 1 teaspoon lemon juice if using. Transfer the dressed pasta to serving bowls, sprinkle with grated Parmesan cheese, and serve immediately. Offer extra Parmesan and crushed red pepper at the table.
