Pineapple Juice

Prepare pineapple

Cut off the crown and base of the pineapple. Stand it upright and slice away the skin, then cut the fruit into quarters and remove the core. Chop the flesh into chunks (about 4 cups).

Blend

Place the pineapple chunks and 1 cup cold water in a blender. Add 2 tablespoons sugar and 1 tablespoon fresh lime juice. Blend on high until completely smooth, about 45–60 seconds.

Strain (optional)

If you prefer a smoother juice, pour the blended mixture through a fine-mesh strainer or cheesecloth into a pitcher, pressing with a spatula to extract as much liquid as possible. Discard pulp or reserve for smoothies.

Chill and serve

Add ice to glasses (about 1/2 cup per serving) and pour pineapple juice over ice. Stir briefly and serve immediately. Yield: about 3–4 cups.

Cucumber Lemonade

Make cucumber puree

Trim and peel the cucumber if desired. Chop into chunks and add to a blender with 1/4 cup of the cold water. Blend until smooth, about 30 seconds.

Strain cucumber

Pour the cucumber puree through a fine-mesh sieve into a pitcher, pressing gently to extract juice. Discard or reserve pulp.

Combine lemonade

To the pitcher with cucumber juice, add 1 cup fresh lemon juice, 4 cups cold water, and 3 tablespoons simple syrup. Stir until combined. Taste and adjust sweetness or lemon to preference.

Finish and serve

Add 8 mint leaves (slap them between your palms first to release aroma) and gently muddle them in the pitcher or leave whole. Add ice to glasses and pour cucumber lemonade over ice. Garnish with a cucumber slice and a mint sprig if desired.

Iced Tea

Brew tea

Bring 4 cups water to a boil. Remove from heat and add 4 black tea bags. Steep for 5 minutes for a medium strength (longer for stronger).

Sweeten while hot

Remove tea bags, squeezing gently. While tea is still hot, stir in 3 tablespoons granulated sugar or honey until dissolved. This dissolves more easily when warm.

Cool

Let the sweetened tea cool to room temperature, then transfer to the refrigerator to chill for at least 30 minutes, or pour over a large pitcher of ice to cool quickly.

Serve

Fill glasses with ice, pour chilled tea over ice, and add a lemon slice to each glass. Serve cold.

Brewed Coffee

Measure and heat water

Measure 1 liter filtered water. Heat water to 92–96°C (just off boil). If using a drip machine, follow manufacturer water recommendations.

Brew

Place 60 g medium-ground coffee into your brewer (drip, pour-over, or French press). Pour or run the heated water over the grounds evenly. Brew time: drip ~5 minutes, pour-over ~3–4 minutes, French press 4 minutes before plunging.

Serve

Pour brewed coffee into cups. Offer milk/cream (100 ml) and sugar (2 tsp) on the side for guests to add to taste.
