Make herb butter
In a small bowl, combine the softened butter, minced garlic, chopped rosemary, chopped thyme, chopped parsley, remaining 1 1/2 teaspoons kosher salt and 3/4 teaspoon black pepper. Mix until well combined.
Apply herb butter and truss
Gently loosen the skin over the chicken breasts with your fingers and spread about two-thirds of the herb butter directly under the skin over the breasts and thighs. Rub the remaining butter all over the exterior of the chicken. Drizzle olive oil over the chicken and rub to coat evenly. If desired, tie the legs together with kitchen twine and tuck the wing tips under the bird for even roasting.
Arrange vegetables and roast
Place the carrots and celery in a roasting pan or ovenproof skillet, forming a bed for the chicken. Put the chicken on top breast-side up. Roast in the preheated oven at 425°F (220°C) for 15 minutes to develop color, then reduce the oven temperature to 375°F (190°C) and continue roasting for 45–60 minutes more, or until an instant-read thermometer inserted into the thickest part of the thigh reads 165°F (74°C). Baste once with pan juices halfway through the lower-temperature roast if desired.
Rest the chicken
Remove the chicken from the oven and transfer to a cutting board. Tent loosely with foil and let rest 15–20 minutes so the juices redistribute. While the chicken rests, reserve the pan drippings for the mushroom sauce (pour off excess fat, leaving about 1–2 tablespoons and browned bits).
Mushroom Sauce
Prepare base
Place a large skillet over medium heat. Add 2 tablespoons butter and 1 tablespoon olive oil. When the butter foams, add the finely chopped shallot and sauté for 1–2 minutes until translucent. Add the minced garlic and cook 30 seconds until fragrant.
Deglaze and build flavor
If using, pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom, and cook 1–2 minutes until reduced by half. Add the reserved pan drippings (about 1–2 tablespoons) and the chicken broth. Stir in the Dijon mustard and fresh thyme. Bring to a gentle simmer and reduce for 4–6 minutes to concentrate flavors.
Finish the sauce
Reduce heat to low and stir in the heavy cream. Simmer gently 2–3 minutes to warm through. Taste and season with 1 teaspoon salt and 1/2 teaspoon black pepper, adjusting to preference. If you prefer a thicker sauce, whisk the cornstarch into the cold water to make a slurry and slowly stir into the simmering sauce, cooking 1 minute until thickened.
