Sweeten beans and chickpeas (if unsweetened)
If using unsweetened cooked mung/adzuki beans or garbanzo beans, make a quick syrup: in a small saucepan combine 2 tablespoons sugar and 2 tablespoons water and heat until sugar dissolves. Add the cooked beans (about 1 cup each) and simmer 2–3 minutes until liquid is slightly glossy and coating the beans. Cool completely before assembling. Transfer to shallow containers for your halo-halo bar.
Prepare canned / jarred ingredients
Drain nata de coco and kaong well. Slice jackfruit into thin strips and drain sweet banana slices. If macapuno or other jellied fruits are very syrupy, rinse briefly and drain to avoid overly sweet halo-halo. Keep each item in its own shallow bowl or pan for the bar.
Portion ube halaya and leche flan
Spoon ube halaya into a small bowl and chill. Cut leche flan into small 1/2–3/4-inch cubes and arrange in a shallow container with a little of its caramel syrup kept separately if desired.

Chill milk and ice cream
Place evaporated milk in the refrigerator until service. Keep ube or vanilla ice cream in the freezer until the moment of assembly.
Set out toasted pinipig, toasted peanuts and condensed milk in small bowls for guests to add as desired.

Assembly (single serving)
1. Spoon 2–3 tablespoons total of a few different sweetened layers into the bottom of a 6–8 oz cup (aim for 3–4 different items: beans, macapuno, jackfruit, kaong, etc.). 2. Add a tablespoon of leche flan cubes and 1–2 tablespoons ube halaya on top of the fruit/beans layer (ube can also be served on top later). 3. Pack the cup loosely with about 3/4 to 1 cup shaved/crushed ice, pressing gently so the layers stay mixed but ice remains airy. 4. Drizzle 2–3 tablespoons chilled evaporated milk over the top; for a sweeter option drizzle 1–2 tablespoons sweetened condensed milk as well. 5. Add a generous scoop (about 2 tablespoons) of ube ice cream on top. 6. Sprinkle 1–2 tablespoons toasted pinipig and 1 tablespoon crushed toasted peanuts. 7. Serve immediately with a long spoon so diners can mix everything (halo-halo means mix-mix).
Bar tips & variations
• Keep ice and milk cold; replenish shaved ice frequently to avoid melty bowls. • Label each container so guests know what each item is (especially important for those with allergies). • Offer vegan options: replace evaporated milk with sweetened coconut milk and use vegan ice cream. • To make attractive presentations, finish some cups with a swirl of ube halaya on top before adding ice cream and garnishes.
