Prep and Grill Pumpkin

Preheat oven to 220°C (430°F) or prepare a hot grill. Toss cubed pumpkin with 1 tablespoon vegetable oil and a pinch of salt. Spread in a single layer on a baking sheet or grill tray. Roast or grill for 25–30 minutes, turning once, until edges are caramelized and pieces are tender. Remove and let cool slightly.

Sauté Aromatics

In a large heavy-bottomed pot, heat the remaining 1 tablespoon vegetable oil over medium heat. Add chopped onion and carrot and sauté 6–8 minutes until softened and translucent. Add crushed garlic, sliced ginger, and bruised chopped lemongrass; cook 2–3 minutes until fragrant, stirring so garlic doesn't burn.

Toast Spices and Deglaze

Add turmeric and cumin to the pot and stir 30–45 seconds to bloom the spices. Pour in about 150 ml of the vegetable stock to deglaze the pan, scraping up any browned bits from the bottom.

Simmer Soup

Add the roasted pumpkin pieces and remaining vegetable stock to the pot. Bring to a gentle simmer, reduce heat to low, and simmer uncovered for 12–15 minutes to let flavors meld. If using whole lemongrass pieces, remove and discard any large fibrous pieces with a slotted spoon before blending (you can leave small pieces if you plan to strain).

Blend to Smooth

Remove the pot from heat. Use an immersion blender to purée the soup until silky-smooth. Alternatively, working in batches, transfer soup to a blender (do not overfill) and purée until smooth, then return to pot.

Finish with Coconut & Citrus

Stir in coconut milk, lime juice, and salt and pepper. Warm gently over low heat for 3–5 minutes — do not boil once coconut milk is added to preserve its texture. Taste and adjust seasoning (add more salt, lime, or a little sugar if needed).

Garnish & Finish

Swirl and Serve: Ladle soup into bowls. Drizzle a teaspoon of coconut cream in a swirl pattern on each bowl and finish with a light drizzle of olive oil or chili oil for shine and heat.

Garnish: Sprinkle toasted pumpkin seeds and chopped cilantro over each bowl. Add a few thin slices of red chili if using, and place a lime wedge on the side for extra acidity.

Optional Textural Finish: For a smoky grilled accent, reserve a few roasted pumpkin cubes, char them briefly on a hot grill or skillet until edges are charred, and place on top of each bowl as a garnish.

Serve hot: This recipe makes about 6 generous starters or 4 main-course portions. Store leftovers covered in the refrigerator for up to 3 days; reheat gently on the stove, adding a splash of stock if too thick.
