Prepare glazes and garnishes
Warm the apricot jam with 2 tablespoons warm water in a small saucepan or microwave until smooth and thin (about 30 seconds in microwave or 2 minutes over low heat). Strain if needed to remove chunks. Place powdered sugar in a small bowl for dusting and arrange sliced almonds and fresh berries in small bowls for garnish.
Glaze danishes and plate pastries
Using a pastry brush, lightly brush the warmed apricot jam glaze over the tops of the mini fruit danishes to give a shiny finish. Dust the croissants and eclairs with a light dusting of powdered sugar just before service. Place pastries on chilled or room-temperature platters, grouping by type and adding garnishes (berries near danishes, almonds beside eclairs) for visual appeal. Provide serving tongs on each platter.
Keep pastries covered with a clean cloth or domes until service to retain freshness. Replenish trays as needed during service.

Set up component station
Arrange all halo-halo components in individual shallow bowls or hotel pans with small serving spoons or ladles. Place bowls of sweetened red beans, white beans, macapuno, jackfruit, nata de coco, sago, kaong, creamed corn, and ube halaya in an accessible line. Keep evaporated milk and condensed milk in pitchers near the end of the line. Place ice shaver or crushed-ice container at the start, and bowls or clear cups at the end. Have scoops of ube and vanilla ice cream in insulated containers or ice-filled bowls to stay cold.
How to assemble halo-halo (for attendants or self-serve instructions)
In each small bowl or clear cup, layer approximately: 2 tablespoons sweetened red beans, 1 tablespoon sweetened white beans, 1 tablespoon macapuno, 1 tablespoon jackfruit, 1 tablespoon nata de coco, 2 tablespoons sago, 1 tablespoon creamed corn, and 1 tablespoon kaong. Add 1–2 tablespoons ube halaya on top of the layered mix. Pack lightly and top with a generous mound of crushed/shaved ice (about 1/2 to 3/4 cup). Drizzle 2–3 tablespoons evaporated milk and 1–2 tablespoons condensed milk over the ice (adjust to taste). Finish with a scoop (about 2–3 ounces) of ube or vanilla ice cream and a small cube of leche flan. Sprinkle 1 tablespoon toasted pinipig or crushed cornflakes for crunch and serve with a long spoon.
Keep extra components chilled and replenish as needed. Replace shaved ice frequently to avoid melting; keep an assistant monitoring the ice supply during service.
Fresh Fruits
Prepare and toss fruit
Wash and dry all fruit thoroughly. Hull and halve strawberries, cut watermelon and pineapple into bite-size cubes, halve large grapes, peel and slice kiwi, and segment citrus. Gently toss the prepared fruit in a large bowl with 2 tablespoons lemon juice to help prevent browning on kiwi and some apple (if added). Chill fruit until service.
Plate fruit for the station
Arrange fruits attractively on large platters or in bowls, grouping colors for visual appeal (for example, a row of red strawberries next to green kiwi and yellow pineapple). Garnish with fresh mint sprigs. Provide serving forks or tongs at each platter and replenish fruit from reserves as needed.
