Method

Preparation

1

Measure and heat water

Measure 2 cups (about 480 ml) of filtered water for brewing and an additional 1/4 cup (about 60 ml) for blooming/rinsing. Heat the brewing water to 200°F (about 93°C). If you don’t have a thermometer, bring water to a boil and let it sit for 30 seconds.

2

Grind coffee

Weigh or measure 1/3 cup (about 28–30 g) of whole beans. Grind to a medium-coarse consistency (similar to sea salt) for a standard drip brewer or pour-over. Adjust grind finer for faster extraction or coarser if coffee tastes bitter.

3

Prepare filter and rinse

Place a paper filter in your pour-over cone or drip brewer. Pour the 1/4 cup (60 ml) of hot water through the filter to rinse it and preheat the brewer/carafe. Discard the rinse water.

4

Add grounds

Add the ground coffee to the rinsed filter and gently level the bed of grounds so water will contact evenly.

5

Bloom

Start a timer. Pour about 60 ml (1/4 cup) of hot water evenly over the grounds to saturate them. Allow the coffee to bloom for 30–45 seconds — you should see bubbling as trapped CO2 escapes.

6

Continue pouring

After the bloom, slowly pour the remaining hot water in a steady spiral or center-to-edge pulses, keeping the water level consistent and avoiding the filter walls. Aim to finish pouring by 2:30–3:00 minutes total brew time (including bloom) for a standard extraction.

7

Drain and serve

Allow all water to drain through the grounds. Remove the brewer and discard the used grounds and filter. Pour the brewed coffee into cups immediately to maintain temperature and flavor.

Finishing

8

Optional additions

If desired, stir in milk or cream (about 2 tablespoons per cup), sweetener (about 1 teaspoon), or a pinch of salt to taste. Adjust to your preference.

9

Serve immediately. Leftover coffee can be stored in a thermal carafe for up to 1 hour for best flavor; beyond that it will start to degrade in taste.
