Method
Prepare the Mussels
Clean the Mussels
Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.
Cook the Chorizo and Peppers
In a large pot, heat olive oil over medium heat. Add diced chorizo and sauté for 3-4 minutes until it starts to brown. Add the diced red bell pepper and minced garlic, cooking for another 2-3 minutes.
Steam the Mussels
Pour in the white wine and bring to a simmer. Add the cleaned mussels and cover the pot. Steam for 5-7 minutes until the mussels open up.
Add Cream
Once the mussels are open, stir in the heavy cream. Season with salt and black pepper to taste. Cook for an additional 2 minutes, then remove from heat and sprinkle with chopped parsley.
Prepare the French Fries
Prepare the Potatoes
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
Fry the Potatoes
Carefully add the cut potatoes in batches to avoid overcrowding. Fry for about 5-7 minutes until golden brown and crispy. Remove and drain on paper towels.
Season the Fries
Sprinkle with salt while still hot.
