    Prepare the Herb Mousseline

    In a food processor, blend the chicken breast with fresh herbs, salt, and pepper until smooth. Set aside.

    Wrap the Lamb

    Season the lamb loin with salt and pepper. Spread the herb mousseline over the lamb, then wrap tightly in plastic wrap. Chill in the refrigerator for at least 30 minutes.

    Make the Potato Croquettes

    Boil the potatoes until tender. Mash them and mix in the saffron, cumin, egg, salt, and pepper. Form into small patties and refrigerate for 15 minutes.

    Cook the Lamb

    Preheat the oven to 180°C (350°F). Remove the plastic wrap from the lamb and sear in a hot pan with olive oil until browned on all sides. Transfer to the oven and roast for 20-25 minutes or until desired doneness.

    Fry the Croquettes

    In the same pan, add more olive oil if needed and fry the potato patties until golden brown on both sides. Drain on paper towels.

    Prepare the Mint Sauce

    In a saucepan, combine lamb stock, chopped mint, salt, and pepper. Simmer for 5-10 minutes until the flavors meld.

    Cook the Summer Vegetables

    Sauté the summer vegetables in olive oil until tender. Season with salt and pepper.

    Slice the lamb loin and serve with the saffron croquettes, sautéed vegetables, and drizzle with mint sauce.
