Prepare Vegetables

    Cook and chop spinach

    If using fresh spinach: heat a large skillet over medium heat, add 1/2 tbs olive oil, then add the spinach in batches. Cook, stirring, until wilted, about 2–3 minutes. Transfer to a colander, press or squeeze with a spoon to remove excess liquid, then chop roughly. If using frozen spinach, thaw fully and squeeze out all liquid and chop if necessary.

    Sauté aromatics

    In the same skillet, add remaining 1/2 tbs olive oil and heat over medium. Add the finely chopped onion and sauté until translucent, about 4–5 minutes. Add the minced garlic and cook 30–45 seconds until fragrant but not browned. Remove from heat and let cool slightly.

    Prepare artichokes

    Drain and pat the artichoke hearts dry, then chop them into roughly 1/2-inch pieces. If they are packed in oil, reserve a small teaspoon for flavor if desired; otherwise discard liquid.

Make the Dip

    Soften and combine cheeses

    Preheat oven to 375°F (190°C). In a large mixing bowl, soften the cream cheese by leaving it at room temperature for 20–30 minutes or microwave in 10–15 second bursts until pliable. Add sour cream, mayonnaise, grated Parmesan, shredded mozzarella (reserve 1/4 cup mozzarella for topping if using), lemon juice, salt, black pepper, and red pepper flakes. Stir with a rubber spatula until smooth and fully combined.

    Fold in vegetables

    Add the chopped, squeezed spinach, chopped artichoke hearts, and the sautéed onion-and-garlic mixture to the cheese base. Fold gently until everything is evenly distributed. Taste and adjust seasoning with additional salt, pepper, or lemon juice as needed.

Bake & Finish

    Assemble in dish

    Butter a 1.5-quart (or similar) baking dish lightly with the tsp of butter. Spoon the mixture into the dish and smooth the top. Sprinkle the remaining Parmesan and reserved mozzarella evenly over the surface.

    Bake in the preheated oven for 20–25 minutes, until the dip is bubbling around the edges and the top is lightly golden. If you want a more browned top, place under the broiler for 1–2 minutes—watch closely to avoid burning.

    Rest and garnish

    Remove from oven and let rest 5 minutes. Garnish with an extra pinch of red pepper flakes or chopped fresh parsley if desired. Serve warm.
