Prep & Blanch

    Trim and rinse

    Rinse the green beans under cold water. Trim the stem ends and remove any strings or blemished ends. Snap or cut into 1½–2 inch lengths if desired (you can leave whole if preferred).

    Bring water to boil

    In a large pot, bring 4 cups of water and 1 teaspoon kosher salt to a rolling boil over high heat.

    Blanch

    Add the prepared green beans to the boiling water and cook until bright green and just tender, about 3–4 minutes depending on bean thickness. Do not overcook — they should still have some bite.

    Shock

    Immediately transfer the beans to a bowl of ice water or run under very cold water to stop cooking. Drain well and set aside.

Sauté & Finish

    Soften onion

    In a large skillet or sauté pan over medium heat, melt 2 tablespoons butter with 1 tablespoon olive oil. Add the chopped onion and a pinch of salt; cook, stirring occasionally, until the onion is soft and translucent, about 6–8 minutes. If the onion begins to brown too quickly, reduce the heat slightly.

    Add garlic

    Add the minced garlic to the skillet and cook, stirring, for 30–45 seconds until fragrant. Avoid letting the garlic brown.

    Deglaze and simmer

    Pour in 1 cup chicken or vegetable broth, 1 teaspoon apple cider vinegar, and 1 teaspoon sugar. Stir to combine and bring to a gentle simmer.

    Combine with beans

    Add the drained green beans to the skillet. Toss to coat in the onion-broth mixture and simmer uncovered for 3–5 minutes so the flavors meld and the liquid reduces slightly. Taste and adjust seasoning with 1 teaspoon freshly ground black pepper and kosher salt to taste (start with 1/4 teaspoon and add more if needed). If you like heat, add 1/4 teaspoon red pepper flakes during this step.

    Finish

    Turn off the heat and stir in an extra 1 tablespoon of butter (optional) for a glossy finish. Sprinkle with chopped fresh parsley if using.

    Serve

    Transfer the green beans to a serving dish and serve warm. These keep well for a day in the refrigerator and the flavors deepen if made ahead and gently reheated.
