Trim and cut
Trim both ends off the eggplant. Cut into evenly sized sticks about 3 inches long by 3/4 inch thick (like thick fries). Aim for uniform thickness for even cooking.

Place the sticks in a large bowl, sprinkle with 1 tablespoon salt, toss to coat, and let sit for 20–30 minutes. This draws out excess moisture and reduces bitterness.

After 20–30 minutes, transfer the eggplant sticks to a colander and rinse under cold running water briefly to remove excess salt. Pat thoroughly dry with clean kitchen towels or paper towels. If still damp, let sit on a rack for 5–10 minutes to dry further.

Arrange three shallow bowls or wide plates: one with the flour, one with beaten eggs mixed with 1/4 cup milk, and one with the breadcrumbs mixed with Parmesan (if using), garlic powder, onion powder, smoked paprika, 3/4 teaspoon salt, and 1/2 teaspoon black pepper. Whisk the flour bowl to remove lumps.

Working in batches of 6–8 sticks, dredge each eggplant stick first in flour, shaking off excess, then dip into the egg-milk mixture, letting excess drip off, and finally press into the breadcrumb mixture to coat thoroughly. Place breaded sticks on a tray or plate in a single layer. For an extra-crisp crust, double-dip: after first breadcrumb coat, dip briefly back in the egg and re-coat with breadcrumbs.

Pour about 1/2 inch to 1 inch oil into a heavy skillet (or use a deep fryer) — roughly 2 cups for a 10–12 inch skillet. Heat oil over medium-high heat until it reaches 350°F (175°C) or when a breadcrumb sizzles and browns in about 30–45 seconds. If you don't have a thermometer, look for steady medium-high simmering with small bubbles.

Fry breaded eggplant sticks in batches so they don't crowd the pan (about 6–8 sticks per batch depending on pan size). Fry 2–3 minutes per side until golden brown and crisp. Total fry time per batch will be about 4–6 minutes. Adjust heat as necessary to keep oil between 325–350°F so the interior cooks without over-browning the crust.

Using a slotted spoon or tongs, transfer fried sticks to a wire rack set over a baking sheet or a plate lined with paper towels to drain. Sprinkle immediately with a pinch of salt. Repeat with remaining sticks.

Whisk together 1/2 cup Greek yogurt (or mayonnaise), 1 teaspoon lemon juice, 1/2 teaspoon minced garlic, 1/4 teaspoon salt and 1/4 teaspoon black pepper until smooth. Adjust seasoning to taste. Chill until ready to serve.
