    Prep bread and spread

    Slice the roll or bread horizontally. Spread the moreau (or mayonnaise) evenly on both cut sides. Set aside.

    Slice avocado

    Halve the avocado, remove the pit, scoop out the flesh and thinly slice. Lightly season the slices with a pinch of salt and a grind of black pepper. Set aside.

    Assemble sandwich

    On the bottom half of the toasted bread layer shredded iceberg lettuce, two tomato slices, the Swiss cheese slice, grilled chicken breast, bacon strips (lay them so each bite gets bacon), and avocado slices. Top with remaining bread half. If desired, press lightly and cut sandwich in half.

Chicken Marinade / Grilling

    Make marinade

    In a small bowl whisk together olive oil, lemon juice, minced garlic, smoked paprika, kosher salt, and black pepper.

    Marinate chicken

    Pat the chicken breast dry and place in the bowl with the marinade. Rub to coat thoroughly and let sit at room temperature for 10–15 minutes (or cover and refrigerate for up to 2 hours).

    Grill or pan-sear chicken

    Heat a grill or skillet over medium-high heat. If using a skillet, add a light drizzle of oil. Cook the chicken breast about 5–7 minutes per side (depending on thickness) until an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Transfer to a cutting board and rest 5 minutes, then slice thinly against the grain.

    Optional: Melt cheese

    If you prefer melted Swiss, place the cheese slice on the chicken in the last 1 minute of cooking and cover briefly to melt.

To Finish

    Cook bacon

    If bacon is not already cooked, cook 3 strips in a skillet over medium heat until crisp, 6–8 minutes, turning occasionally. Drain on paper towels.

    Toast bread

    Spread butter on the cut sides of the bread and toast in a skillet or under a broiler until golden and slightly crisp, about 1–2 minutes per side.

    Final seasoning and serve

    After assembling, squeeze an optional lemon wedge over the chicken and avocado for brightness. Serve immediately.
