Prepare bacon
Cook the 8 bacon slices until crisp. You can pan-fry over medium heat (about 8–10 minutes, turning occasionally) or bake on a rimmed sheet at 400°F (200°C) for 12–16 minutes. Transfer to paper towels to drain and keep warm.

Toast bread
Spread about 1/2 tablespoon of butter on one side of each of the 8 bread slices. Heat a skillet over medium-low heat. Place bread butter-side-down in the skillet and toast until golden, 2–3 minutes per side (or toast in a toaster and butter the cut sides). Remove and set 4 slices aside as bottoms and 4 as tops.

Season tomatoes and shred lettuce
While bread toasts, thinly slice the large tomato into 4 slices. Place tomato slices on a small plate and lightly season with 1/4 teaspoon kosher salt and 1/4 teaspoon black pepper. Shred enough iceberg to measure 2 cups, then rinse and spin or pat dry. Toss shredded lettuce with remaining 1/2 teaspoon kosher salt and 3/4 teaspoon black pepper to lightly season.

Warm turkey and melt cheese (optional)
If you prefer warm turkey and melty Swiss, place the 12 oz sliced turkey on top of the 4 bottom bread slices, top each with 1 slice Swiss, and briefly place under a broiler or in a 350°F (175°C) oven for 3–5 minutes until cheese softens. Alternatively, layer cold turkey and cheese as-is.

Assemble honey mustard
If using prepared honey mustard, portion 1 tablespoon per sandwich (6 tablespoons total). If making a quick honey mustard: mix 4 tablespoons Dijon or yellow mustard with 2 tablespoons honey and 1 tablespoon mayonnaise (optional) until smooth—yield is approximately 6 tablespoons.

Build sandwiches
Spread about 1 tablespoon of honey mustard evenly over each of the 4 top bread slices. On each bottom slice: layer turkey (about 3 oz per sandwich), 2 slices of cooked bacon, a tomato slice, a generous handful (about 1/2 cup) of seasoned shredded iceberg, and 1 slice Swiss (if not already melted). Top with the honey-mustard-smeared bread slice, buttered/toasted side up.

Finish and serve
Cut each sandwich diagonally in half if desired. Serve immediately while bacon is crisp and cheese is warm, with optional chips or pickles. Makes 4 sandwiches (servings).
