    Prepare oven and dish

    Preheat the oven to 400°F (200°C). Place a small ovenproof baking dish (about 6-8 inches/15-20 cm) on the counter. Lightly brush the bottom with 1 teaspoon of olive oil to prevent sticking.

    Assemble feta and vegetables

    Place the 8 oz block of feta in the center of the prepared baking dish. Surround the feta with the halved cherry tomatoes and the kalamata olive halves in an even layer so everything will roast together.

    Add aromatics and seasonings

    Scatter the thinly sliced garlic over and around the feta and tomatoes. Sprinkle the 1 tsp dried oregano, 1 tsp red pepper flakes, 1 tsp freshly ground black pepper, and 1/4 tsp salt evenly over the feta and vegetables.

    Drizzle and finish before baking

    In a small bowl, whisk together 2 tbsp extra-virgin olive oil, 1 tbsp honey, and 1 tsp fresh lemon juice. Drizzle the mixture evenly over the feta, tomatoes, and olives so the cheese and vegetables are coated.

    Bake

    Place the baking dish in the preheated oven and bake on the middle rack for 20-25 minutes, or until the feta is softened, starting to brown at the edges, and the tomatoes have blistered and released their juices.

    Finish and garnish

    Remove the dish from the oven. Using a spoon, gently mash and stir the feta and roasted tomatoes together to create a creamy mixture. Taste and adjust seasoning if needed. Sprinkle the chopped fresh parsley and torn fresh basil leaves over the top.

    Serve warm with crusty bread slices or crostini for spreading. Offer extra olive oil or honey on the side if desired.
