Wash and dry the potatoes. Dice into roughly 1/2-inch cubes so they cook evenly. Pat dry again to remove surface moisture.

Heat a large nonstick or cast-iron skillet over medium-high heat. Add 1 tablespoon olive oil and let it warm until shimmering but not smoking (about 30–60 seconds).

Add the diced potatoes in a single layer. Let them cook undisturbed for 3–4 minutes to develop color, then stir or flip pieces to promote even browning.

Sprinkle smoked paprika, garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper over the potatoes. Continue cooking, stirring every 2–3 minutes, until potatoes are tender and golden brown, about 10–12 minutes total depending on size. Reduce heat to medium if browning too quickly.

Check doneness by piercing a few pieces with a paring knife; they should be tender inside. Remove skillet from heat, taste and adjust seasoning if needed, and stir in chopped parsley if using. Keep warm while preparing the omelette.

Omelette

Prep ingredients: measure 1.5 cups liquid egg whites, shred/dice 3 oz cooked chicken, rinse spinach and roughly chop larger leaves, tear 2 slices of American cheese into pieces. Have salt, pepper, and onion powder ready.

Heat a 9–10 inch nonstick skillet over medium heat. Add 1 teaspoon butter and 1 tablespoon olive oil; swirl to coat the pan. The butter adds flavor and the oil raises smoke point for healthier cooking.

Add the diced chicken to the pan and warm for 1–2 minutes until lightly heated and edges start to brown. Season with a light pinch of the salt and pepper if your chicken is unsalted.

Add the chopped spinach to the pan with the chicken. Sauté together for 1–2 minutes until the spinach wilts and any excess moisture evaporates. Spread the mixture evenly across the pan.

Reduce heat to medium-low. Pour the 1.5 cups liquid egg whites evenly over the chicken and spinach. Let the eggs set at the edges for about 30–45 seconds.

Sprinkle the torn American cheese pieces evenly over the egg whites. Season the top with 1/4 tsp salt, 1/8 tsp black pepper, and 1/4 tsp onion powder.

Cover the skillet with a lid and cook gently for 2–3 minutes until the egg whites are set through and the cheese has melted. Alternatively, you can finish under a preheated broiler for 30–60 seconds if your pan is oven-safe; watch closely to avoid overcooking.

Once set, slide the omelette onto a plate or fold it in half using a spatula. Let rest 30 seconds, then transfer to serving plate alongside the warm breakfast potatoes.

Garnish with optional chopped parsley or chives and serve with hot sauce or salsa on the side if desired.
