Make aioli
In a small bowl, combine 1/2 cup mayonnaise, minced garlic, 1 tsp lemon juice, 1/2 tsp Dijon mustard, 1/2 tsp olive oil, 1/4 tsp salt and 1/4 tsp black pepper. Whisk until smooth and chill in the refrigerator while you prepare the rest of the sandwich so flavors meld (10–15 minutes).

Season and cook fries
Preheat oven to 220°C (430°F) if baking, or heat a large skillet over medium-high if pan-frying. Toss potato sticks with 3 tbs oil, 1 tsp salt and 1/2 tsp paprika (optional). For oven: spread in a single layer on a lined baking sheet and roast 25–30 minutes, turning once, until golden and crisp. For skillet: cook in batches 8–12 minutes, turning occasionally, until crisp and browned. Keep warm.

Slice vegetables
While bacon cooks, core and slice the green pepper into thin strips. Peel and slice the onion into thin half-moons.

Assemble
Slice hoagie rolls lengthwise without cutting through, leaving a hinge. Spread a generous layer (about 1–2 tbs each) of the prepared aioli on both cut surfaces of each roll. Divide and layer the sautéed peppers and onions evenly between the two rolls. Place 3 bacon strips on each roll. Top each with two slices of Swiss cheese. If you prefer melted cheese, place assembled sandwiches open-faced under a broiler for 1–2 minutes until cheese melts.

Serve
Close the rolls, slice in half if desired, and serve immediately with the fries on the side and extra aioli for dipping.
