Crack and mix

Crack 3 large eggs into a medium bowl. Add 2 tablespoons of milk or cream, 1 teaspoon fine sea salt, and 1 teaspoon freshly ground black pepper.

Whisk

Using a fork or whisk, beat the eggs briskly until yolks and whites are fully combined and the mixture is slightly frothy and uniform in color (about 20–30 seconds). This adds a bit of air for a tender omelette.

Heat the pan

Place a nonstick or well-seasoned 8–10 inch skillet over medium-low to medium heat. Add 1 tablespoon unsalted butter and let it melt, swirling the pan so the butter coats the bottom evenly. Watch carefully: the butter should foam but not brown.

Add eggs

Pour the beaten eggs into the center of the pan. Let them sit undisturbed for 6–8 seconds so the edges begin to set.

Stir then level

Using a heatproof rubber spatula, gently stir the eggs in small circles, bringing the cooked edges toward the center and tilting the pan so uncooked egg flows to the edges. After about 20–30 seconds of stirring, stop and let the eggs set but remain slightly runny on top. The goal is tender curds rather than a fully firm omelette.

Add filling

When the eggs are mostly set but still slightly moist on top, sprinkle the filling: 1 ounce shredded cheese, 1 ounce ham/prosciutto (if using), and 1 tablespoon chopped chives or parsley. Distribute evenly over one half of the omelette.

Fold

Use the spatula to lift the opposite edge and fold the omelette in half over the filling. Let it cook for 20–30 more seconds to melt the cheese and finish cooking the interior but avoid overcooking — the omelette should be tender and slightly creamy inside.

Finish and slide

If desired, add 1 teaspoon extra butter on top to melt for gloss. Tilt the pan and gently slide the omelette onto a warm plate, seam-side down.

Season and serve

Season with a pinch of flaky sea salt and freshly ground black pepper to taste. Serve immediately.
