Combine liquids and oats

In a medium saucepan, combine 1 cup rolled oats, 1 cup water and 1 cup milk. Add 1 tsp salt. Stir to distribute oats evenly.

Cook

Place saucepan over medium-high heat and bring to a gentle boil, stirring occasionally to prevent sticking. Once it reaches a boil, reduce heat to low and simmer, stirring every 30–60 seconds, until the oats are thick and tender, about 5–7 minutes for rolled oats. If mixture becomes too thick, add up to 2–4 tablespoons (30–60 ml) additional milk or water to reach desired consistency.

Finish and flavor

When oats are nearly done, stir in 1 tbsp brown sugar, 1 tsp vanilla extract and 1 tsp ground cinnamon. Taste and adjust sweetness or cinnamon as desired. Cook an additional 30 seconds to incorporate flavors.

Toppings (optional)

Divide the oatmeal into bowls. Top each serving with sliced banana, 1/2 cup fresh berries (to share between servings), and sprinkle 2 tbsp chopped nuts. Drizzle 1 tbsp maple syrup over each portion if desired. Serve immediately.
