Method
Tea Base
Brew the Earl Grey
Bring 0.5 cup water to a near boil. Steep 1 tsp loose Earl Grey (or 1 tea bag) in the hot water for 3 minutes to make a concentrated infusion. Pour the concentrated infusion into a heatproof measuring cup and add 1 cup of hot brewed Earl Grey (or supplement with hot water if needed) so you have about 1 cup of strong, hot Earl Grey tea. Remove the tea bag or strain leaves and set tea aside.
Keep the tea hot while you prepare the remaining components so it will blend smoothly with the other warm ingredients.
Citrus & Sweet
Combine citrus and sweetener
In a separate small bowl or measuring cup, stir together 1/2 cup fresh orange juice, 1 tablespoon fresh lemon juice and 2 teaspoons honey syrup until the honey is fully dissolved. Taste and adjust: if you prefer sweeter, add up to 1 more teaspoon honey syrup; if brighter, add a few drops more lemon juice.

Mix spirits
Into a warmed heatproof serving glass or large mug, add 1.5 oz London dry gin and 2 tsp orange bitters. Pour in the citrus & sweet mixture and stir gently to combine with the spirits.

Assemble the London Sunshine Fog
Pour the hot strong Earl Grey tea (about 1 cup) into the glass with the spirit and citrus mixture. Stir thoroughly for 10–15 seconds to marry flavors and slightly cool the drink. Add 2 oz cold or sparkling water to create a light ‘foggy’ emulsion and to bring the drink to a pleasant drinking temperature.
Garnish with a thin orange wheel and a light sprinkling (about 1/4 tsp) of freshly grated lemon zest over the surface. Serve immediately while warm.
