Biscuit-style Bubble Waffle Batter
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.
In a separate medium bowl, whisk the whole milk, buttermilk, egg, and vanilla extract until blended.
Slowly pour the wet mixture into the dry ingredients while stirring gently with a spatula until just combined. Do not overmix; some small lumps are fine.
Let the batter rest at room temperature for 10 minutes to hydrate the flour and allow the leavening to begin working.
Cooking Waffles
When the iron is hot, open it and pour/scoop batter into the center. For a bubble waffle iron, fill the bottom mold about 3/4 full so batter will expand into the bubbles but not overflow. For a Belgian iron, use about 3/4 cup of batter depending on size.
Close the iron and cook for 3–5 minutes (bubble irons) or until the waffle is deep golden brown and crisp on the edges. Timing will vary by iron; check at 3 minutes to avoid burning. The biscuit-style batter produces a slightly denser, tender interior with crisp exterior.
Yield: this batch makes 3–4 child-sized bubble waffles depending on iron size.
Housemade Whipped Cream & Garnishes
Chill a mixing bowl and the whisk/beaters in the fridge for 5–10 minutes (optional but helps whipping). Pour the heavy cream into the chilled bowl.
Add the powdered sugar (2 tbs) and vanilla extract (1/2 tsp). Whip on medium-high speed with a hand mixer or whisk by hand until soft peaks form — about 2–3 minutes with a mixer. Do not overbeat; stop when peaks hold shape but are still glossy.
Transfer whipped cream to a small serving bowl and refrigerate until ready to serve. Keep sprinkles in a separate small dish for children to add themselves.
Place maple syrup in a small pitcher or ramekin for serving on the side.
Optionally dust the finished waffles lightly with 1 tsp powdered sugar just before serving.
Assembly & Serving
Place one bubble waffle on each child's plate. Serve the housemade whipped cream, sprinkles, and maple syrup on the side so kids can add toppings themselves.
If desired, fold or roll the bubble waffle into a cone/pocket shape to hold toppings. Use the whipped cream and a sprinkle pinch to decorate, and let children drizzle maple syrup to taste.
Serve immediately while waffles are warm and crisp. Leftover waffles can be reheated in a 350°F (175°C) oven for 5–7 minutes to restore crispness.
