Prepare Batter
In a medium bowl, whisk together the 2 large eggs and 1 cup milk until combined. Add 1 tbsp granulated sugar, 1 tsp vanilla extract and 2 tbsp melted butter; whisk to incorporate.
In a separate bowl, combine 1 cup all-purpose flour, 1 tsp baking powder and 1 tsp salt. Gradually add the dry ingredients to the wet mixture and stir until just combined. Do not overmix; a few small lumps are fine. Let batter rest 5 minutes while you heat the waffle iron.
Preheat an egg waffle maker (or small individual waffle iron) according to manufacturer instructions. Lightly grease the plates with nonstick spray or a little melted butter. Pour batter into the hot iron to fill the cavities (amount depends on your iron—use about 3–4 tbsp per mini cavity or enough so each bubble is filled). Close and cook 3–5 minutes, or until golden and set. Remove waffles and keep warm on a wire rack. Repeat with remaining batter to make 2 kid-sized egg waffles (recipe yields approximately 2 small waffles or one large kid plate).

Prepare Scrambled Egg
In a small bowl, beat 1 large egg with 1/4 tsp salt and a pinch (about 1/8 tsp) black pepper. Heat a small nonstick skillet over low–medium heat and add 1 tsp butter. Pour in the beaten egg, let set briefly, then gently scramble with a spatula until soft curds form, about 1–2 minutes. Remove from heat to avoid overcooking.
Kids Toppings
To assemble, place the warmed egg waffle(s) on a plate. Top one side with the scrambled egg, arrange the bacon pieces alongside or across the waffle, and tuck the mini eggs nearby. Scatter sliced strawberries and banana on the remaining space and sprinkle mini chocolate chips over a corner for a fun treat.
Side
Place about 3/4 cup apple slices or a small mixed fruit cup in a small bowl on the plate. Add 1 tbsp ketchup in a dipping cup for the bacon or egg if the child likes it.
Serve immediately while waffles and egg components are warm. Offer napkin and child-safe utensils. Total plate should be kid-friendly portions and visually appealing—arrange colors and shapes to encourage eating.
