Prepare and dry shake
If using egg white, separate and add half an egg white (about 0.5 egg) to a cocktail shaker. Add 2 oz rye whiskey, 0.5 oz peach liqueur, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, 0.25 oz ginger liqueur, and 2 dashes Angostura bitters. Do a dry shake (no ice) vigorously for 15–20 seconds to emulsify and build a silky foam.
Shake with ice
Add a handful of ice to the shaker (enough to chill well). Shake vigorously for 10–15 seconds until well chilled (shaker will frost).
Strain
Double-strain the mixture into a chilled old-fashioned glass over a large ice cube (or ice sphere) to keep the drink cold and undiluted.
Finish & garnish
Dash 1 aromatic or ginger bitters onto the foam (if using egg white) or directly onto the surface. Express a lemon twist over the drink and place a thin lemon wheel on the rim or on the ice. Optionally grate a small amount of fresh nutmeg or sprinkle a pinch of crushed crystallized ginger over the foam for extra aroma.
Serve
Serve immediately while cold. Sip slowly to enjoy the interplay of spicy rye, bright lemon, sweet peach, and warming ginger. One cocktail serves one person.
