Warm up and prep

Ensure the espresso machine is fully heated (group head and portafilter at operating temperature). Fill the reservoir with filtered water if needed.

Dose and grind

Weigh 18 g of espresso beans on the scale. Grind them to a fine espresso grind (texture like powdered sugar but slightly gritty). Adjust grind so that extraction time will be 25–30 seconds for 36–40 g yield (see shot timing).

Purge and dry

Purge a small amount of hot water through the group head for 1–2 seconds to clear residues and warm the portafilter. If desired, rinse and dry the portafilter briefly (use the optional rinsing water).

Distribute and tamp

Place the double basket in the portafilter, add the 18 g of ground coffee, level/distribute the grounds with your finger or distribution tool to avoid channeling, then tamp evenly with about 30 lb (13.6 kg) of pressure to create a flat, uniform puck. Wipe any loose grounds from the rim.

Lock in and brew

Lock the portafilter into the machine's group head. Place a shot glass or demitasse on the scale and tare. Start the shot and start the timer simultaneously.

Target yield and timing

Pull for a yield of about 36–40 g (roughly 2 oz / 60 ml combined liquid crema and espresso) in 25–30 seconds. Watch the flow: it should start as a thin stream that becomes steady and honey-like. Stop the shot once the yield/time target is reached (or when the flow becomes pale and fast).

Assess and adjust

If extraction is too fast (<20 s), use a finer grind or slightly more dose. If too slow (>35 s) or very slow, coarsen the grind slightly or use a slightly lower dose. Taste the double shot and adjust for bitterness or sourness in future pulls.

Serve or add to drink
