Method
Preparation
Preheat the Oven
Preheat your oven to 425°F (220°C). This high temperature will help to caramelize the vegetables, bringing out their natural sweetness.
Prepare the Vegetables
Wash and peel the carrots, then cut them into bite-sized pieces. Chop the zucchini, bell peppers, and red onion into similar sized pieces. Halve the cherry tomatoes.
Combine Vegetables
In a large mixing bowl, combine all the prepared vegetables: carrots, zucchini, bell peppers, red onion, and cherry tomatoes.
Season the Vegetables
Drizzle the olive oil over the vegetables. Sprinkle the salt, black pepper, garlic powder, dried oregano, and dried thyme. Toss everything together until the vegetables are evenly coated with the oil and seasonings.
Roast the Vegetables
Spread the seasoned vegetables in a single layer on a large baking sheet. Make sure they are not overcrowded to allow for even roasting. Place the baking sheet in the preheated oven and roast for 25-30 minutes, stirring halfway through.
Check for Doneness
After 25-30 minutes, check if the vegetables are tender and caramelized. If they need more time, continue roasting for an additional 5-10 minutes.
Serve
Once the vegetables are roasted to your liking, remove them from the oven. Allow them to cool slightly before serving. Enjoy your oven-roasted seasonal vegetables warm!
