Prepare ingredients

Wipe mushrooms with a damp paper towel and quarter larger ones so pieces are roughly 1/2–3/4 inch. Mince shallot and garlic. If using chicken or pork, pat dry and season both sides lightly with 1/2 teaspoon salt and 1/4 teaspoon pepper. If using tofu, press to remove excess moisture and slice into 1/2-inch slabs; season lightly.

Sear protein (if using meat or tofu)

Heat a large skillet over medium-high heat and add 1 tablespoon oil or butter. When hot, add the protein in a single layer (work in batches if needed) and sear until golden—about 2–3 minutes per side for thin-sliced chicken or pork, 3–4 minutes per side for tofu. Transfer seared pieces to a plate and set aside. Leave any fond (brown bits) in the pan.

Cook mushrooms

Reduce heat to medium, add remaining 1 tablespoon olive oil and 1 tablespoon butter to the same skillet. Add minced shallot and sauté 1–2 minutes until translucent. Add garlic and cook 30 seconds. Add mushrooms in a single layer and cook without stirring for 2–3 minutes to let them brown, then stir and continue cooking another 3–4 minutes until mushrooms are tender and browned.

Deglaze and simmer

Add dried thyme and stir for 15 seconds, then pour in the wine (or vermouth) to deglaze, scraping browned bits from the bottom. Cook 1 minute to reduce slightly. Add the stock, soy sauce, remaining 1/2 teaspoon salt, and 1/4 teaspoon pepper. Return the seared protein to the pan (nestle into the mushrooms) and bring to a gentle simmer. Cover and cook until protein is cooked through: about 4–6 minutes for thin chicken/pork, 3–4 minutes for tofu. If you skipped searing protein, simmer mushrooms in the liquid 6–8 minutes until reduced.

Finish sauce

Remove protein to a warm plate if desired. Stir in heavy cream and simmer uncovered 1–2 minutes to thicken slightly. Taste and adjust seasoning with additional salt or pepper if needed. Stir in chopped parsley.

To Serve

If serving with rice, pasta, or mashed potatoes, divide the base (about 4 cups prepared) among plates. Place the cooked protein on top or alongside and spoon generous portions of mushrooms and sauce over everything.

Serve immediately with a lemon wedge on the side for squeezing over, if desired.
