Form Patties
Divide the ground beef into two equal portions (about 8 oz each). Gently form each portion into a patty about 3/4 to 1 inch thick, making a slight indentation in the center with your thumb to prevent puffing while cooking. Avoid overworking the meat.
Season
Season both sides of each patty with kosher salt and black pepper. Lightly brush or sprinkle Worcestershire sauce on one side of each patty (optional) to boost umami.
Fries
Prepare potatoes: scrub the russets clean, peel if desired, and cut into 1/3- to 1/2-inch sticks. Rinse cut fries under cold water until water runs clear to remove excess starch; then pat thoroughly dry with paper towels.
Heat oil: In a heavy-bottomed pot or deep fryer, heat vegetable oil to 325°F (163°C) for the first blanch/fry. If you do not have a thermometer, heat until oil shimmers and a small piece of potato sizzles gently.
Blanch fry: Fry the potatoes in batches for 3–4 minutes until soft but not colored. Remove with a slotted spoon and drain on paper towels. Increase oil temperature to 375°F (190°C).
Final fry and season: Fry the blanched fries in batches again for 2–3 minutes until golden-brown and crisp. Drain on paper towels, immediately season with kosher salt and paprika while hot. Keep warm in a low oven (200°F / 95°C) until burgers are ready.
Toppings & Build
Cook bacon: In a skillet over medium heat, lay bacon strips in a single layer and cook until crisp, turning as needed, about 6–8 minutes depending on thickness. Transfer to paper towels to drain and keep warm.
Cook patties: Heat a cast-iron skillet or griddle over high heat until very hot. Add a light brush of neutral oil if needed. Place patties presentation-side down and cook 3–4 minutes without moving to form a crust. Flip and cook 2–3 minutes for medium (adjust time for desired doneness). During the last 1 minute of cooking, brush the top of each patty generously with BBQ sauce, then place two slices of American cheese on each patty and cover the pan briefly (30–60 seconds) to melt the cheese and set the sauce.
Serve: Plate each burger with a generous portion of fries. Offer extra BBQ sauce on the side for dipping.
