Mix and proof
In a large bowl, combine 3 cups flour, 1 tsp instant yeast, 1 tsp salt, and 1 tsp sugar. Stir to distribute dry ingredients.
Add 1 cup warm water (about 105–115°F / 40–46°C) and 1 tbs olive oil. Mix until a shaggy dough forms.
Turn dough onto a lightly floured surface and knead for 6–8 minutes until smooth and elastic. If dough is too sticky, add up to 2 tbs extra flour, 1 tbs at a time.

Prepare quick sauce
While dough rises, make the sauce. In a small bowl combine 1 cup crushed tomatoes, 1 tsp minced garlic, 1 tsp dried oregano, 1 tsp dried basil, 1 tsp salt, 1/4 tsp black pepper and 1 tsp olive oil. Stir to combine and taste; adjust salt or herbs as desired. Set aside at room temperature.
Toppings & Cheese Prep
Preheat oven to 500°F (260°C) or as high as your oven will go. If you have a pizza stone, place it on the middle rack and let it heat for at least 30 minutes. If using a baking sheet, place it in the oven to preheat for 10–15 minutes.
Prepare chosen four toppings from the Toppings section. Cook any raw meats fully (for example, brown and crumble 1/2 cup Italian sausage) and drain excess fat. Slice vegetables thinly so they cook quickly. Pat mushrooms and pineapple dry to avoid excess moisture.
Shred 2 cups mozzarella and measure 1/4 cup grated parmesan. Keep cheeses ready to assemble.
Assemble & Bake
After dough has doubled, punch it down and turn onto a lightly floured surface. Divide into 2 equal portions for two 10–12" pizzas (or keep whole for one large 14" pizza). Let rest 5 minutes.
Working with one portion, stretch or roll dough into a roughly 10–12 inch circle, leaving a slightly thicker rim. If dough resists, let rest a few minutes then continue.
Spread about 1/2 cup of sauce evenly over the dough, leaving the rim uncovered. Sprinkle about 1 cup shredded mozzarella over the sauce, reserving a little for finishing.
Slide the pizza (on parchment or peel) onto the preheated stone or baking sheet. Bake at 500°F (260°C) for 8–12 minutes, rotating once at midtime, until crust is golden and cheese is bubbly and slightly browned. Baking time will vary with oven and thickness.
If making two pizzas, repeat assembly and bake each. Let baked pizzas rest 2–3 minutes before slicing.
Finish & Serve
Brush the baked crust lightly with remaining olive oil (about 1/2 tbs total) and sprinkle with 1/2 tsp red pepper flakes if desired.
Garnish with torn fresh basil (if used) and a light dusting of remaining grated parmesan. Slice into 6–8 pieces and serve hot.
