Prepare meat

Place the ground beef in a bowl. Add kosher salt, freshly ground black pepper, and Worcestershire sauce (if using). Gently combine with your hands or a fork until just mixed — do not overwork the meat to avoid a tough patty.

Form patties

Divide the mixture into two equal portions (about 8 oz each). Gently form each portion into a patty about 3/4 to 1 inch thick and slightly wider than the buns. Make a shallow dimple in the center of each patty with your thumb to reduce puffing during cooking.

Heat cooking surface

Heat a cast-iron skillet or heavy frying pan over medium-high heat for 2–3 minutes until hot. If grilling, preheat to medium-high. Add 1 tablespoon neutral oil to the pan and swirl to coat (skip oil if using a well-seasoned grill).

Cook patties

Place patties on the hot surface. Cook undisturbed for 3–4 minutes to develop a crust. Flip once and cook 3–4 minutes more for medium (adjust time for desired doneness). If adding cheese, place a slice on each patty during the last 1 minute of cooking and cover the pan or close the grill lid to melt.

Rest patties

Transfer cooked patties to a plate and loosely tent with foil. Let rest 3–5 minutes to allow juices to redistribute.

Buns & Assembly

Toast buns

While the patties rest, melt the butter in a small skillet over medium heat. Place cut sides of buns face down in the butter and toast 1–2 minutes until golden and lightly crisp. Alternatively, toast on the grill for 30–60 seconds.

Assemble burger

Place a toasted bottom bun on a plate. Add optional condiments (mayonnaise, mustard, ketchup) as desired. Place the rested beef patty on top, followed by lettuce, tomato slices, onion rings, and pickles if using. Top with the toasted bun crown.

Serve

Serve the burger immediately while hot with your choice of sides. Provide extra condiments on the side.
