Prep pickles
Drain pickle chips in a colander and pat dry thoroughly with paper towels. If chips are very large, cut into halves to make 24–30 bite-size pieces. Drying prevents excess splatter and helps the breading adhere.
Make dry mix
In a shallow bowl or rimmed plate, whisk together the all-purpose flour, cornstarch, cornmeal (if using), smoked paprika, cayenne pepper, garlic powder, onion powder, kosher salt, and black pepper until evenly combined.
Make wet wash
In another bowl, whisk the eggs with 1/2 cup buttermilk and the optional hot sauce until smooth.
Prepare crumbs
Place panko breadcrumbs in a third shallow bowl or plate. For extra flavor, you can add a pinch (about 1/4 tsp) of garlic powder and paprika to the panko and toss.
Dredge pickles (three-step breading)
Working in batches of 6–8 pieces to avoid overcrowding, first dredge each dried pickle chip in the seasoned flour mix, shaking off excess. Then dip into the egg-buttermilk wash, allowing excess to drip off. Finally press into the panko breadcrumbs to coat completely. Place finished pieces on a wire rack set over a baking sheet to rest for 5–10 minutes; this helps the coating adhere and reduces breakage in the oil.
Heat oil
Pour vegetable oil into a deep heavy-bottomed pot or Dutch oven to a depth of about 2–3 inches (roughly 1 liter total volume in pot). Heat over medium-high until it reaches 350°F (175°C) on a deep-fry thermometer. If you don't have a thermometer, test with a small piece of bread—it should brown in about 45–60 seconds.
Fry pickles
Fry the breaded pickle chips in batches (do not overcrowd) for about 1.5–2.5 minutes per side, turning once with a slotted spoon or spider until golden brown and crisp. Maintain oil temperature near 350°F; adjust heat so it doesn't drop too low or spike too high. Remove with a slotted spoon and transfer to a wire rack or paper towel-lined baking sheet. Sprinkle lightly with a pinch of salt while still hot.
Finish
Allow fried pickles to drain for a minute, then serve immediately with the homemade ranch dressing. If making ahead briefly, keep them in a single layer on a baking sheet in a 200°F (95°C) oven to stay warm and crisp for up to 15–20 minutes.
Homemade Ranch Dressing
Combine mayonnaise, sour cream, and buttermilk in a small bowl and whisk until smooth and slightly thickened.
Stir in chopped dill, chopped chives, minced garlic, lemon juice, salt, and black pepper. Taste and adjust seasoning—add more lemon for brightness, more buttermilk to thin, or more herbs for freshness.
Chill the dressing for at least 15 minutes to allow flavors to meld. Serve chilled alongside the fried pickles for dipping.
