Prepare Okra

Rinse the okra and pat dry thoroughly with paper towels. Trim the stem ends only, leaving pods whole or slice into 1/2-inch rounds depending on preference. For a less slimy result, dry well and optionally soak trimmed okra in a bowl of buttermilk for 10 minutes to help tenderize and reduce slime.

Set up Breading Stations

In a shallow bowl or wide dish whisk together 1 cup buttermilk and 1 large egg until combined. In a separate large bowl combine 1 cup all-purpose flour, 1 cup cornmeal, 1/4 cup fine cornmeal or masa (if using), 2 tsp salt, 1 tsp black pepper, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne, and 2 tbsp cornstarch. Mix thoroughly so spices are evenly distributed.

Coat the Okra

Working in small batches (about 1 to 1.5 cups okra per batch), dredge the okra in the flour-cornmeal mixture, then dip into the buttermilk-egg mixture, then dredge again in the dry mixture for a double coat. Press the dry mix onto the okra to adhere well. Place coated okra on a wire rack while you heat the oil; this keeps the breading from getting soggy.

Heat Oil

Pour about 3 to 4 cups vegetable oil into a heavy-bottomed skillet or Dutch oven to a depth of 1 to 1.5 inches. Heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test with a small pinch of breading — it should sizzle and brown within 30–40 seconds.

Fry

Carefully add a single layer of breaded okra to the hot oil without overcrowding (about a single layer). Fry 2–4 minutes, stirring occasionally with a slotted spoon or spider so all sides brown evenly, until golden brown and crisp. Remove with a slotted spoon to a paper towel-lined wire rack or plate to drain. Repeat with remaining batches, allowing oil to return to 350°F between batches. Total active frying time about 10–12 minutes.

Finish and Season

While still hot, sprinkle the fried okra with a light pinch of salt to taste. Transfer to a serving platter and let rest 1–2 minutes to crisp further before serving alongside ranch.

Make-Ahead / Reheat

To keep warm when frying multiple batches, place cooked okra on a wire rack in a 200°F (95°C) oven. Reheat leftover okra in a 375°F (190°C) oven for 6–8 minutes to restore crispness rather than microwaving.

Homemade Ranch

In a small bowl combine 1/2 cup mayonnaise and 1/4 cup sour cream. Whisk until smooth.

Add 1/4 cup buttermilk gradually to reach a dip consistency (add more or less depending on desired thickness).

Stir in 1 tbsp finely chopped chives, 1 tbsp finely chopped parsley, 1/2 tsp dill (or 1/2 tsp dried), 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp salt, 1/4 tsp black pepper, and 1 tsp lemon juice or vinegar. Taste and adjust seasoning.

Cover and chill the ranch for at least 15 minutes to let flavors meld. Bring to room temperature before serving if preferred. Keep refrigerated and use within 3–4 days.
