Pancake Batter

Method

Pancake Batter

1

Prep dry ingredients

In a large bowl whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and fine sea salt until evenly combined and aerated. This ensures an even rise and consistent texture.

2

Mix wet ingredients

In a separate medium bowl, whisk together the whole milk, buttermilk, large eggs, melted unsalted butter (warm, not hot), and pure vanilla extract until smooth and uniform.

3

Combine wet and dry

Create a well in the dry ingredients and pour in the wet mixture. Gently fold with a spatula or whisk until just combined. Some small lumps are okay — do not overmix or the pancakes will be tough. Let the batter rest 10 minutes at room temperature; this hydrates the flour and helps create a tender crumb.

Cook the 14-inch Pancake

4

Preheat pan/griddle

Place a 12–14 inch heavy skillet or flat griddle over medium-low to medium heat and let it warm for 5–7 minutes. You want the surface to be evenly hot but not smoking. If using an electric griddle, set to 350°F (175°C).

5

Test and grease

Lightly coat the pan with a small amount of neutral oil and wipe with a paper towel so it’s thinly greased. Pour a 1–2 tablespoon test pancake (or a few drops of batter) to confirm the heat — it should sizzle gently and form bubbles slowly. Adjust heat if it browns too quickly.

6

Pour batter for 14-inch pancake

For a single 14-inch pancake, pour roughly 2 to 2 1/4 cups of batter into the center of the skillet, working quickly and steadily so the batter spreads. If your batter is too thick to spread, gently tilt the pan in a circular motion or use the back of a large spoon to coax it outward to about a 14-inch circle. Maintain medium-low heat to allow the pancake to cook through without burning the outside.

7

Watch for bubbles and edges set

Cook for 4–6 minutes on the first side. Look for even browning around the edges and a network of bubbles forming and beginning to pop in the center. The edges should look set and slightly dry when ready to flip.

8

Flip carefully

Using a wide, thin spatula (or two spatulas for support), carefully slide under the pancake and flip it in one smooth motion. If needed, support with an extra spatula to prevent tearing. Cook the second side for 2–4 minutes until golden brown and the center is cooked through. A skewer inserted in the center should come out clean or with a few moist crumbs.

9

Keep warm (if serving multiple pancakes)

If making more than one 14-inch pancake, keep finished pancakes in a 200°F (95°C) oven on a wire rack set over a baking sheet while you cook the rest to maintain texture and warmth.

Finishing & Serving

10

Plate and finish

Transfer the 14-inch pancake to a large serving plate. Dot the top with the whipped or softened butter so it starts to melt across the surface. Dust lightly with powdered sugar if using.

11

Serve

Serve the pancake with maple syrup and optional fresh berries or banana slices on the side. Cut into wedges (like a pizza) and enjoy immediately. Leftovers can be refrigerated up to 2 days and reheated gently in a low oven.
