Gather all the ingredients and ensure they are at room temperature.

Prepare the Ingredients

In a large pot, heat 12 liters of filtered water to 70°C (158°F). Add the crushed pale malt, caramel malt, and crystal malt, stirring well. Maintain the temperature for 60 minutes.

Mash the Grains

After mashing, sparge the grains with hot water to extract the sugars. Collect the wort in a clean fermentation vessel.

Sparge

Bring the wort to a boil. Once boiling, add Citra hops, Simcoe hops, and Mosaic hops. Boil for 60 minutes, adding hops at intervals.

Boil the Wort

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches 20°C (68°F).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the American Ale yeast and seal the vessel. Allow it to ferment for 1-2 weeks.

Fermentation

After fermentation, dissolve priming sugar in a small amount of water and add it to the beer. Bottle the beer and cap them. Allow to carbonate for another 1-2 weeks.

Bottling

Chill the bottles in the fridge before serving. Enjoy your homemade Bengal IPA!
