Prepare the Steak

Season the Wagyu flatiron steak with salt and crushed black peppercorns on both sides.

Cook the Steak

In a skillet over medium-high heat, add olive oil. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare. Remove from skillet and let it rest.

Sauté Broccoli Rabe

In the same skillet, add minced garlic and cook for 1 minute. Then add the broccoli rabe and sauté for about 5-7 minutes until tender. Season with salt.

Make Cognac Gravy

Add cognac to the skillet to deglaze, scraping up any bits from the bottom. Then add beef broth and let it simmer for about 5 minutes until slightly thickened. Stir in butter for richness.

Serve

Slice the rested steak and plate with sautéed broccoli rabe. Drizzle with cognac gravy before serving.
