Prepare the Steak

Remove the ribeye from the refrigerator and let it come to room temperature for about 30 minutes. Preheat your grill or skillet to high heat.

Season the Steak

Rub the ribeye with olive oil, then generously season both sides with salt and black pepper.

Cook the Ribeye

Place the steak on the hot grill or skillet. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Use a meat thermometer to check for an internal temperature of 130°F for medium-rare.

Char the Cebollitas

While the steak is cooking, place the cebollitas on the grill or in a skillet. Cook for about 2-3 minutes on each side until they are nicely charred.

Rest the Steak

Remove the ribeye from the grill and let it rest for about 10 minutes before slicing. This helps the juices redistribute.

Slice the ribeye against the grain and serve with the charred cebollitas and lime wedges on the side.
