Prepare the Peach Filling

In a medium saucepan, combine diced peaches, sugar, lemon juice, cinnamon, nutmeg, and butter. Cook over medium heat until the peaches are soft and the mixture is syrupy, about 10-15 minutes. Let cool.

Make the Empanada Dough

In a mixing bowl, combine 2 cups of all-purpose flour, 1/2 tsp of salt, and 1/2 cup of cold butter, cut into cubes. Blend until the mixture resembles coarse crumbs. Stir in 1/4 cup of ice water gradually until the dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.

Assemble the Empanadas

Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut into 5-inch circles. Place a tablespoon of the peach filling in the center of each circle, fold over, and crimp the edges to seal.

Bake the Empanadas

Preheat the oven to 375°F (190°C). Place the empanadas on a baking sheet lined with parchment paper. Brush with egg wash (1 egg beaten with 1 tbsp water) and bake for 20-25 minutes or until golden brown.
