Pulled pork & sauce

Warm and sauce the pork
Heat 1 tablespoon vegetable oil in a medium skillet over medium heat. Add the diced onion and sauté until translucent, about 3–4 minutes. Add the shredded pulled pork, 3 tablespoons Original BBQ Sauce, kosher salt and black pepper. Cook, stirring, until pork is heated through and sauce is evenly distributed, about 4–5 minutes. Remove from heat and keep warm.

In a small saucepan over low heat, combine the drained baked beans, 1 tablespoon Original BBQ Sauce and 1/2 teaspoon smoked paprika. Stir occasionally and warm until gently bubbling, about 4–5 minutes. Keep warm.

Lay one flour tortilla flat on a clean work surface. In the center of the tortilla place 3/4 cup warm pulled pork mixture, 1/4 cup warmed beans, 1/2 cup shredded cheddar, and a spoonful of pickled jalapeños if using. Fold the sides of the tortilla over the filling, then fold the bottom up and roll tightly to form a burrito-style wrap. Repeat with remaining tortillas and fillings to make 4 wraps.

Prepare a breading station: one shallow bowl with 1/4 cup flour, a second shallow bowl with the beaten eggs and 2 tablespoons milk, and a third bowl with 1 cup breadcrumbs. Lightly dust each wrapped tortilla with flour, shaking off excess. Dip into the egg wash, allowing excess to drip off, then coat evenly with breadcrumbs.

Heat 3–4 cups vegetable oil in a heavy-bottomed pot or deep fryer to 350°F (175°C). If you don’t have a thermometer, test by dropping a small piece of bread— it should sizzle and brown in ~30–60 seconds. Fry the breaded wraps in batches (do not overcrowd) for 3–4 minutes per side, turning once, until golden brown and crisp. Use a slotted spoon or tongs to transfer to a wire rack or paper towel–lined sheet pan. While still hot, sprinkle lightly with 1/2 teaspoon salt divided among the wraps.

Allow the fried wraps to rest 1–2 minutes before cutting. This helps the filling settle and prevents hot sauce or beans from spilling out.
To serve

Slice each fried wrap in half on a diagonal. Serve immediately with extra Original BBQ Sauce for dipping and a side of coleslaw, if desired.
