Drain dill pickle spears in a colander and reserve 60 ml of the pickling liquid. Cut each pickle spear lengthwise into 3–4 thin fry-shaped sticks (about 1–1.5 cm wide). Pat pieces very dry with paper towels to remove excess brine; this helps batter adhere and prevents excess splatter when frying.
If time allows, place the cut pickle fries in a shallow bowl and toss with 1 tablespoon of the reserved pickling liquid; then lay out single layer on paper towels for 10 minutes to slightly rehydrate surface flavor without being soggy.

Dry mix
In a medium bowl, whisk together cornmeal, all-purpose flour, instant dry mustard, smoked paprika, garlic powder, onion powder, kosher salt, and black pepper until evenly blended. If using panko for extra crunch, place it in a shallow dish separately for final dredging.
Wet mix
In a separate bowl, whisk the egg with cold water, Dijon mustard, hot sauce, and 1 tablespoon of reserved pickling liquid until smooth. Cold water keeps the batter light and helps it cling to the pickles.
Pour the wet mixture into the dry mix and stir briefly until just combined into a slightly thick batter. You want a batter that coats but is not gummy; add up to 1–2 tablespoons more cold water if it seems too stiff. Let batter rest 3–5 minutes for the cornmeal to hydrate.
Set up an assembly line: a tray for raw cut pickles, the batter bowl, a shallow dish with panko (if using), and a wire rack over a sheet pan for finished fries.
Frying
Pour oil into a heavy skillet or small pot to a depth of about 1 to 1.5 inches (or use a deep fryer). Heat oil to 175°C (350°F). If you don't have a thermometer, test by dropping a small pinch of batter — it should sizzle and float steadily.
Fry for about 1.5–2.5 minutes, turning once, until golden brown and crisp. Do not overcrowd the pan. Adjust heat as needed to maintain 175°C (350°F).
Use a slotted spoon to transfer fries to the wire rack set over the sheet pan to drain. Sprinkle lightly with a pinch of salt while still hot. Repeat with remaining pickles.
If you prefer a crispier result, finish the batch on 200°C (400°F) preheated oven for 3–4 minutes on the wire rack to set and reduce oiliness.
Dipping Sauce (optional)
Combine mayonnaise, sour cream (or yogurt), horseradish (or extra Dijon), lemon juice, hot sauce, and salt in a small bowl. Whisk until smooth and refrigerate until serving. Taste and adjust seasoning with salt or more hot sauce to preference.
