Combine bases
In a medium bowl, whisk together the mayonnaise and sour cream until smooth and homogenous.
Pickled components
Finely mince the dill pickles and chop the capers. Add them to the mayonnaise mixture and stir to combine so the pickled pieces are evenly distributed.
Aromatics & herbs
Finely mince the shallot and chop the parsley and dill (if using). Fold these aromatics into the sauce, stirring until evenly incorporated.
Seasoning & acid
Add the lemon juice, Dijon mustard, sugar, kosher salt, and black pepper to the bowl. Stir thoroughly and taste. Adjust salt, pepper, or lemon to your preference; if the sauce tastes too sharp, add a touch more sugar (up to 1 tsp).
