Burger Patties

    Mix and form patties

    Place the ground beef in a bowl. Add kosher salt, freshly ground black pepper, and Worcestershire sauce. Gently fold the mixture with your hands until just combined — do not overwork. Divide into 2 equal portions and form into patties about 3/4-inch thick and slightly wider than the buns. Press a shallow dimple in the center of each patty with your thumb to prevent doming while cooking.

    Cook patties

    Heat a large skillet or griddle over medium-high heat until very hot. Add 1 tsp vegetable oil and swirl to coat. Place the patties in the pan and cook undisturbed for 3–4 minutes until a brown crust forms. Flip and cook 2–3 minutes more for medium; during the last 60–90 seconds place 1–2 slices of cheddar on each patty and cover briefly to melt the cheese. Internal temperature should reach 160°F (71°C) for well-done; adjust cooking time to preference.

    Cook bacon

    While patties rest, cook the bacon. Place bacon slices in a cold skillet in a single layer, then turn heat to medium. Cook, flipping occasionally, until crisp and browned, about 8–12 minutes depending on thickness. Transfer to a paper-towel-lined plate to drain. If desired, keep skillet drippings to toast buns or discard.

    Prepare vegetables

    Slice the tomato into 1/4-inch rounds and sprinkle lightly with 1/4 tsp salt. Thinly slice the red onion. Rinse and dry lettuce leaves. Have pickles ready. These will be assembled fresh to maintain crunch.

    Make burger spread

    In a small bowl combine mayonnaise, yellow mustard, ketchup, and hot sauce. Taste and adjust seasoning; add a pinch of salt or more hot sauce if desired.

    Toast buns

    Spread softened butter evenly on the cut sides of the buns. Warm a skillet over medium heat (you can use reserved bacon drippings for extra flavor). Toast the buns, buttered side down, until golden and crisp, about 1–2 minutes.

    Assemble burgers

    Spread about 1 tbsp of the burger spread on the bottom bun. Place a lettuce leaf on the spread, then a cheesy beef patty. Top each patty with three slices of crispy bacon (arrange as desired), 2 tbsp pickles, a couple rings of red onion, and a tomato slice. Spread remaining sauce on the top bun and place it over the sandwich. Press gently to compact.

    Cut the burger in half if desired and serve immediately with fries or a side salad. Provide extra ketchup, mustard, or hot sauce at the table.
