Shape patties
Divide the ground beef into 4 equal portions (about 4 oz each). Gently form each portion into a patty about ¾-inch thick, handling the meat as little as possible. Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.

Season
Season both sides of each patty with kosher salt and freshly ground black pepper just before cooking.

Cook patties
Heat a large skillet or cast-iron pan over medium-high heat until hot. Add 1 tablespoon vegetable oil and swirl to coat. Place patties in the pan without crowding (work in batches if needed). Cook for 3-4 minutes on the first side until a brown crust forms. Flip and cook another 3 minutes for medium (adjust to desired doneness). In the last minute of cooking, place a slice of Swiss cheese on each patty, cover the pan, and allow the cheese to melt for about 1 minute. Transfer cooked patties to a plate and tent loosely with foil to rest.

Sauté
In a large skillet, heat 1 tablespoon unsalted butter and 1 teaspoon olive oil over medium-high heat. Add the sliced onions and cook, stirring occasionally, for 4-5 minutes until they begin to soften and turn translucent. Add the sliced mushrooms and continue to cook, stirring occasionally, until the mushrooms release their liquid and it evaporates, about 6-8 minutes. Add the minced garlic and fresh thyme (if using) and cook for 30-45 seconds until fragrant.

Season mushrooms & onions
Season the mixture with 1 teaspoon salt and ½ teaspoon black pepper. Taste and adjust seasoning. Remove from heat and keep warm until assembly.

Spread mayo
Evenly spread about 1 tablespoon mayonnaise on the bottom half of each toasted bun (use the remaining mayo on top halves if desired).

Serve
Serve the mushroom burgers hot with your choice of sides. If desired, offer extra mayonnaise or mustard on the side.
