Burger Patties

Mix the meat
Place ground beef in a large bowl. Add finely chopped fresh jalapeños, diced onion, minced garlic, Worcestershire sauce, kosher salt, black pepper, and smoked paprika. Gently combine with your hands or a fork until ingredients are evenly distributed. Do not overwork the meat — mix just until combined.

Form patties
Divide the mixture into two equal portions (about 8 ounces each). Shape each portion into a patty about 3/4 to 1 inch thick and slightly wider than the buns. Make a shallow indentation in the center of each patty with your thumb to help prevent puffing while cooking.

Chill (optional)
If time allows, place formed patties on a plate, cover, and refrigerate for 15–30 minutes to help them hold shape while cooking.

While patties cook, make the sauce. In a small bowl combine mayonnaise, finely chopped pickled jalapeño slices (drained), lime juice, chopped cilantro, and a pinch of salt. Stir until smooth and adjust seasoning to taste. If you want more heat, add a little of the fresh jalapeño or a dash of hot sauce.

Assemble burgers: Spread about 1–2 tablespoons of the jalapeño-mayo on the bottom bun. Place a lettuce leaf on the mayo, then the hot cheeseburger patty. Top with tomato slice and a few rings of red onion. Add optional bacon or avocado if using. Spread a little mayo on the top bun and close the burger.
