Burger Patties

Form
Divide ground beef into two equal portions (about 8 oz each). Gently form each into a patty about 3/4" thick and slightly wider than your buns. Do not overwork the meat. Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.

Season
Season both sides of each patty evenly with kosher salt and black pepper just before cooking.

Cook
Heat a heavy skillet or griddle over medium-high heat and add 1 tablespoon neutral oil. When the oil is shimmering, add the patties. Cook for 3–4 minutes on the first side without moving, until a brown crust forms. Flip and cook 2–3 minutes more for medium (adjust time to desired doneness). During the last 1–2 minutes of cooking, place one slice of Swiss cheese on each patty and cover the pan briefly to melt.

Prepare Bacon
If bacon is not already cooked, bake or fry 4 strips until crisp. Drain on paper towels and halve each strip to make 8 shorter pieces.

Prepare Bleu Mayo
In a small bowl combine 1/4 cup mayonnaise with 1/4 teaspoon cracked black pepper. Stir in half (about 1/4 cup) of the bleu cheese crumbles and mix gently so some chunks remain. Reserve the remaining bleu crumbles for topping.

Assemble Toppings
When the patties are cooked and cheese is melted, place patties on a clean surface. Top each with 4 pieces of halved bacon (or as desired) and a sprinkle of the remaining bleu cheese crumbles.

Spread about 1 tablespoon of the bleu mayo on the top bun and the remaining mayo (about 1 tablespoon) on the bottom bun. On the bottom bun, layer pickles (4 slices), a few onion rings, and a tomato slice. Place the Swiss-topped patty with bacon and bleu crumbles on top of the tomato. Close with the top bun.

Serve immediately while hot with your choice of side. Leftover mayo and bleu crumbles can be used as a dipping sauce.
