Method
Bun & Spread
- 1
Prep bun and spread
Split the bun horizontally. Mix mayonnaise and mustard in a small bowl. Spread butter lightly on the outer (cut) sides of both bun halves. Heat a skillet or griddle over medium heat and toast the buttered cut sides until golden, about 1–2 minutes. Remove and set aside. Spread the mayo-mustard mix evenly on the inside of the top and bottom bun halves.
Beef Patty
- 2
Form patty
Gently form the 6 oz ground beef into a roughly 4–5 inch patty about 3/4 inch thick, making a slight depression in the center with your thumb to reduce puffing while cooking. Season both sides with kosher salt, black pepper, and garlic powder (if using).
- 3
Cook patty
Heat a heavy skillet or griddle over medium-high heat until hot. Add 1 tsp cooking oil and spread to coat. Place the patty on the hot surface and cook undisturbed for 3–4 minutes until a brown crust forms. Flip the patty and immediately place the American cheese slice on the cooked side. Cook another 2–3 minutes for medium doneness (internal temp ~145–155°F / 63–68°C). If you prefer well done, cook an additional 1–2 minutes.
Bacon & Cheese
- 4
Cook bacon
While the patty cooks (or in a separate skillet), lay the 3 slices of thick-cut bacon in a cold pan and then heat to medium. Cook slowly, turning occasionally, until evenly browned and crisp but still slightly pliable, about 8–10 minutes depending on thickness. Transfer to a paper towel-lined plate to drain.
- 5
Assemble bacon with patty
After the patty is fully cooked and cheese melted, remove from heat. Layer the hot patty with melted cheese onto the bottom bun, then place the 3 bacon slices on top of the cheese so bacon’s fat warms and adheres to the cheese.
Toppings
- 6
Prepare and add toppings
On top of the bacon, arrange the tomato slices (2 slices), onion rings (2 rings), and dill pickle slices (3 slices). Add the iceberg lettuce leaf on top of the pickles or under the patty per preference. Ensure toppings are centered and not over-stuffed to keep the single burger manageable.
Finishes
- 7
Finish and serve
Place the top bun (mayo-mustard side down) onto the stacked burger. Press gently to compact. Optionally, secure with a toothpick. Serve immediately while hot. Recommend serving with a side of fries or a dill pickle spear.
