Mix and form patties

In a large bowl combine ground beef, finely chopped onion, panko breadcrumbs, milk, half an egg (beat one egg and use half), Worcestershire sauce, garlic powder, onion powder, kosher salt, and black pepper. Gently mix with your hands or a fork until just combined — avoid overworking to keep patties tender. Divide mixture into two equal portions and gently form into oval patties about 3/4-inch thick, making a slight indentation in the center of each patty to help them cook flat.

Cook patties

Heat a large skillet or cast-iron pan over medium-high heat. Add vegetable oil and swirl to coat. When oil shimmers, add patties leaving space between them. Cook without moving for 3 to 4 minutes to develop a brown crust. Flip and cook the second side for 3 to 4 minutes for medium doneness (internal temp ~160°F/71°C for ground beef recommended by many authorities). Adjust time ±2 minutes for preferred doneness. Remove patties to a plate and loosely tent with foil to rest while you make the gravy and onions.

While patties are resting or in a separate pan, melt butter with olive oil over medium heat in a skillet. Add sliced onion and spread into an even layer. Season with salt and pepper. Cook, stirring occasionally, 8 to 12 minutes until onions are softened and edges are golden-brown and slightly caramelized. If cooking both patties and onions in same pan, after flipping patties add onions to the perimeter of the pan and sauté in pan juices until tender, then remove with burgers to finish with gravy on top.

Make a roux

Using the same skillet you cooked the patties in (leave any browned bits for flavor), reduce heat to medium and add 2 tablespoons butter. When butter melts, sprinkle in 2 tablespoons flour and whisk continuously for 1 to 2 minutes until the mixture turns a medium-brown color and loses the raw flour taste. Scrape up any browned bits from the bottom of the pan to incorporate flavor.

Finish gravy

Gradually whisk in 1 1/2 cups beef stock, making sure there are no lumps. Add Worcestershire sauce, soy sauce, onion powder, garlic powder, and black pepper. Bring to a gentle simmer and cook 3 to 5 minutes until slightly thickened. Taste and add salt if needed. If gravy becomes too thick, whisk in up to 2 tablespoons more stock or water to reach desired consistency.

Assemble

Return the rested patties to the pan with gravy for 1 minute to rewarm and meld flavors, or place patties on plates and spoon gravy over the top. Top each patty with grilled onions if desired. Serve immediately.
