Preparation & Dry Rub
Make the dry rub
In a bowl, combine brown sugar, paprika, kosher salt, black pepper, garlic powder, onion powder, ground cumin, dry mustard, and cayenne pepper. Mix thoroughly so there are no clumps.
Apply binder and rub
Brush each rack lightly with yellow mustard (this acts as a binder and won’t taste mustardy when cooked). Evenly coat both sides of the racks with the dry rub, pressing it gently into the meat. Let the seasoned racks rest at room temperature for 20–30 minutes or refrigerate up to overnight (covered) for deeper flavor.
Cooking (Oven Method) — tender, fall-off-the-bone
Arrange racks and add moisture
Place each rib rack bone-side down on a foil-lined rimmed baking sheet or in a shallow roasting pan. Pour 1/2 cup apple juice into the bottom of the pan (not over the rub) to create steam and keep the ribs moist. If you want each rack wrapped, place each rack meat-side down on a sheet of aluminum foil, add 2–3 tablespoons of apple juice, then tightly wrap. This is the 2–2-1 style for baby back ribs.
Bake low and slow
For whole racks, bake in the preheated 275°F oven for 2 to 2.5 hours until the meat is tender and has pulled back from the bone ends about 1/4 to 1/2 inch. If wrapped tightly, bake for 2 hours (wrapped) then proceed to basting and finishing steps.
Unwrap and rest briefly
If ribs were wrapped, carefully unwrap (watch for hot steam). Increase oven temperature to 350°F (175°C) or prepare a hot grill. Let the ribs rest 5–10 minutes before saucing so juices redistribute.
Sauce and caramelize
Mix barbecue sauce with apple cider vinegar and honey (if using). Brush a generous layer of sauce on both sides of each rack. Return to the oven unwrapped on a foil-lined sheet and bake at 350°F for 10–15 minutes until sauce sets and begins to caramelize. For a charred finish, transfer to a preheated hot grill or broiler for 2–4 minutes per side, watching closely to avoid burning.
Cooking (Smoker/Grill Option)
Smoke low and slow
If using a smoker, place racks bone-side down on the grate at 225–250°F. Smoke for 2 hours unwrapped to absorb smoke flavor. After 2 hours, spritz with apple juice every 30 minutes to maintain moisture.
Resting & Serving
Remove ribs from oven, smoker, or grill and let rest for 10 minutes. Slice between the bones into individual portions, serve with extra sauce on the side, and garnish with chopped parsley or pickles if desired.
