Prepare crust
Preheat oven to 325°F (160°C). In a medium bowl combine graham cracker crumbs, 2 tbs granulated sugar, a pinch of salt, and the melted butter. Stir until mixture is evenly moistened and holds together when pressed.
Press mixture firmly and evenly into the bottom (and about 1/2 inch up the sides if desired) of a 9-inch springform pan. Use the bottom of a measuring cup to compact the crust. Bake in the preheated oven for 10 minutes. Remove and let cool while preparing the filling.

Mix the filling
Lower oven temperature to 300°F (150°C). In a large bowl or bowl of a stand mixer fitted with the paddle attachment, beat the room-temperature cream cheese on medium-low speed until smooth and free of lumps (about 2–3 minutes). Scrape down the bowl.
Add 1 cup granulated sugar and beat on medium speed until combined and slightly creamy (about 1–2 minutes). Scrape down the bowl again to ensure even mixing.
Beat in the sour cream, then add eggs one at a time on low speed, mixing just until incorporated after each addition. Stir in vanilla extract and lemon zest (if using).
Sprinkle the 2 tbs flour over the batter and fold or beat on low speed just until incorporated; do not overmix. Scrape down the bowl and give a final brief mix to ensure homogenous batter.
Bake cheesecake
Pour the filling over the cooled crust and smooth the top. To reduce cracking, bake the cheesecake in a water bath: wrap the outside of the springform pan with heavy-duty foil (two layers) to prevent leaks. Place the wrapped pan in a larger roasting pan and pour hot water into the roasting pan so it reaches about halfway up the sides of the springform pan.
Bake at 300°F (150°C) until the edges are set and the center still has a slight wobble (about 50–65 minutes). Turn off the oven, crack the oven door open, and let the cheesecake cool in the oven for 1 hour (this gradual cooling helps prevent cracks).
After cooling in the oven, remove the cheesecake from the water bath, unwrap, and cool completely on a wire rack for 1 hour more. Chill the cheesecake in the refrigerator for at least 6 hours, preferably overnight, before adding topping.
Berry Topping
Prepare fruit
If using strawberries, hull and halve or slice large berries so that all fruit is bite-sized. Measure 4 cups total mixed berries.
Make berry glaze
In a medium saucepan combine 0.5 cup granulated sugar, 2 tbs fresh lemon juice, and a pinch of salt. In a small bowl whisk cornstarch into 2 tbs cold water (note: ingredient listed as 'tb s' above — use 2 tbs cold water). Stir the cornstarch slurry into the saucepan.
Add the berries to the saucepan and cook over medium heat, stirring gently, until the mixture comes to a simmer and begins to thicken, about 4–6 minutes. If you prefer some whole berries intact, stir gently and stop cooking when sauce coats a spoon but berries are not completely broken down.
Turn off the heat and stir in 1/2 tsp vanilla extract if using. Let the topping cool to room temperature; it will further thicken as it cools. Taste and adjust sweetness with a little more sugar if desired.
If you want a completely smooth glaze, press the mixture through a fine sieve to remove seeds and pulp, then return to pan briefly to thicken if necessary. For a chunky topping, skip sieving.
Finish & Serve
Optional sour cream layer: Whisk together 1/2 cup sour cream with 1 tsp powdered sugar and spread in a thin, even layer over the chilled cheesecake before adding the berry topping. This gives a tangy contrast and a smooth protective layer between cake and fruit.
Spoon the cooled berry topping over the chilled cheesecake, spreading gently to cover the surface. Chill the assembled cheesecake for at least 30 minutes to let the topping set.
Remove the cheesecake from the springform pan, slice with a hot, clean knife (wipe between slices) and serve. Store any leftovers covered in the refrigerator for up to 3 days.
